The holidays are here and so are the fabulous holiday dinners. Sadly, along with the holiday dinners comes the holiday weight. The problem is we want to enjoy our holiday ham without ending up looking like one. I have put together the perfect solution to enjoy a holiday feast without in taking so many calories that come along with it. Below I have laid out a low calorie 5 course meal (complete with beverage)  for you and your family to enjoy. These items are under 330 calories; whereas, most of holiday dishes can be more than 500 calories easily!

The Appetizer:

Eggplant Ricotta Bites (243 Calories)

1 medium eggplant

Kosher salt

All-purpose flour, for dredging

2 large eggs

3/4 cup breadcrumbs

1/4 cup grated parmesan cheese

1 tablespoon plus 2 teaspoons extra- virgin olive oil, plus more as needed

Tasty Cakes

This Summer there has been a lot of businesses popping up over Germantown in Louisville, Ky. Primarily they have been a lot of businesses opening up on Goss Ave. One business in particular sticks out among the rest. JB Cakes is a quaint little cake shop located on 1101 Goss Ave.Louisville, KY 40217.

JB Cakes sells a variety of baked goods, but their most well know for their cupcakes.

The process starts by choosing a flavor of cupcake that vary in flavors from peanut butter to Oreo and from peach to apple pie.

Next you pick the icing flavor you want to top your tasty little cake. You can choice from cream cheese to whip cream icings, and flavors of white chocolate, peanuts butter, caramel, etc…

Lastly you pics your toppings. You can decorate your pastry with syrups of chocolate, strawberry, and even raspberry. Other toppings you can drizzle on top of your cupcake consists of shredded coconut, brown sugar, chocolate sprinkles, marshmallows, etc.
